For the most refined tastes we mature our traditional cheddar-type island cheese for a minimum period of 9 months. It has a traditional round shape and can be packed in wedges, helping the consumption of this unique Azorean flavour.
Respecting tradition, but appreciating that our consumers are in a hurry, we also sell our traditional island cheese already sliced.
Since the original settlements in the Azores in the 15th century and the arrival of farmers from Northern Europe that this cheddar-type cheese is produced in our islands.
